Impossible Pumpkin Pie

3/4 C Sugar
1/2 C Bisquick
2 Eggs
1 16 oz canned Pumpkin
2 Tbs Melted Butter
2 tsp Vanilla
2 1/2 tsp Pumpkin Pie Spice
1 can Evaporated Milk

Heat oven to 350 degrees.  Lightly grease glass pie pan.  Beat all ingredients 1 minute in blender.  Pour in pan and bake 45-50 minutes until knife comes out clean from center of pie.

*Can be made in muffin tins for individual pies.

Easy Banana Cream Pie

1 medium ripe Banana, sliced
1 Nilla Pie crust (6 oz)
2 1/2 C. Cold Milk
2 pkgs (4 serving size)  Vanilla Instant Pudding & Pie filling
2 C. Cool Whip

Place banana slices on bottom of crust

Pour milk into a large bowl.  Add pudding mixes.  Beat with wire whisk 2 minutes or until well blended.  gently stir in 1 C of whipped topping with wire whisk.  Spoon pudding mixture into crust.

Refrigerate 4 hours or until set.  Top with remaining whipped topping.  Garnish with additional banana slices.  Store leftover pie in refrigerator.

Cranberry Sauces

Lion House Slow-Cooked Cranberry Orange Relish

3 C.  White Sugar
1 1/2 C.  Orange Juice
1 1/2 tsp grated Orange Peel
6 C.  Fresh Cranberries

Combine sugar, orange juice and orange peel in a slow cooker.  Stir until sugar is dissolved.  Stir in the cranberries.  Cover and cook on low setting for 6-8 hours.  Mash mixture with a potato masher.  Cover and refrigerate several hours or overnight.

Makes 18 (1/4 C.) servings




Our Best Bites Cranberry Sauce

12 oz. Cranberries
1 C.  White Sugar
1 C. Orange Juice
1 C. Water
1 stick of Cinnamon
1 very small pinch of ground cloves

Preheat oven to 350 degrees.  Wash cranberries and place in a 9x13 baking dish.  Add water, cloves, cinnamon stick and orange juice.  sprinkle with the sugar.  Bake 1 hour.  Remove from oven, remove cinnamon stick, and allow to cool.  Pulse with immersion blender or process in blender until desired consistency is reached.

*Serve with Turkey, chicken, Swedish meatballs, ice cream or cobbler.

Jerri Ann's Yam and Apple Bake

5 medium Yams
5 medium Apples (i like a mix of granny smith and honey crisp apples)
1/2-1 C fresh Cranberries

Sauce:
2 C Water
1 Stick Butter
1 C Sugar
1/2 tsp Salt
1/2 tsp Cinnamon
3 TBSP Cornstarch

*Cook Yams until soft, not mushy (I bake mine the night before)

*Peel Yams and slice 1" thick
*Peel Apples and slice 1/2" thick

*Arrange yams and apples in a large rectangular dish.  Sprinkle cranberries over top.

*Make sauce by boiling water, butter, sugar, salt, cinnamon and cornstarch together

*Pour sauce over yams and apples.

*Cover with foil, Bake at 350 degrees for 1 hour.

Fresh Cranberry Salsa with Cream Cheese Dip

           12 oz bag fresh cranberries, washed
         2 jalapenos, minced (adjust according to taste)
         1/2 cup sliced green onions, roughly chopped
         1/4 cup chopped cilantro, roughly chopped
         1/2 tablespoon lime or lemon juice
         1/4 teaspoon kosher salt
         1/2 cup sugar, more to taste if desired
         2 (8oz) packages cream cheese, at room temperature

Instructions

  Place cranberries, jalapenos, green onions and cilantro in a food processor and process until fine. Transfer mixture to a bowl and stir in lime juice, salt, and sugar. Chill in fridge for about 2 hours or more. To serve, spread cream cheese evenly in a pie plate or other shallow serving dish. Spread salsa on top and serve with crackers.

Notes
          One recipe makes enough for 2 blocks of cream cheese. Often I'll just serve it over one block at a time and save the extra salsa for another night.

Grandma Darling's Spaghetti Sauce

1 lb. Hamburger
1 large Onion, chopped
1/2 Green Pepper, chopped
1/2 C Ketchup
16 oz Stewed Tomatoes
15 oz Tomato Sauce
6 oz Tomato Paste
1/2- 1 tsp Salt; Pepper; Oregano; Garlic Salt; Basil; Parsley

Brown Hamburger, Onion &; Green Pepper. Drain off fat.  Add remaining ingredients, and simmer for 30 minutes.
